Flourless Peanut Butter and Banana Pancakes

Flourless Peanut Butter and Banana Pancakes

Your mornings are about to get better with these delicious flourless peanut butter and banana pancakes!  Pancakes are my favorite, I simply can't live without them. Having two little girls is also important to make tasteful and healthier recipes of the food they love.  I'm so glad there are so many healthier pancake alternatives that we can enjoy without compromising our fitness and lifestyle goals .

Here is the recipe:

  • 2 Ripe Bananas
  • 3 eggs
  • 2 tablespoon creamy peanut Butter
  • 3/4 oats (quick-cooking)
  • Pinch of salt
  • Cinnamon to taste
  • Optional: add half a scoop of your favorite protein powder- vanilla and chocolate will taste better.
  • Makes 4-6 pancakes

In a medium bowl, mash bananas until puréed. Add eggs, peanut butter, cinnamon, oats and salt. Stir until ingredients are fully mixed.  Heat a lightly oiled (or buttered) pan over medium heat. Pour 1/2 up of batter into the pan.  Cooked for about 2 minutes on both sides.

Top with sliced bananas, peanut butter and maple syrup.  Serve and enjoy!

Tip- You can make bigger batch and store it for those hectic mornings when you don't have time to make them.

  1. can you let me know the nutrition breakdown of these pancakes? also do you recommend freezing and then just popping them in the toaster for busy mornings?

  2. Just made these. They were great! I left the peanut butter out of the mixture and just topped the pancakes with melted peanut butter. So so good!
